Garlic Butter Zucchini

Zucchini served garlic bread style; roasted and smothered in butter and garlic!
ingredients
- 2 medium zucchini, cut in half lengthwise
- 1 tablespoon olive oil
- salt and pepper to taste
- 2 tablespoon butter, softened
- 2 cloves garlic, grated/minced
- 1 tablespoon parsley, chopped
- 1/2 teaspoon lemon zest (optional)
- 1 tablespoon parmigiano reggiano (parmesan cheese), grated
directions
- Brush the zucchini on all sides with oil, season with salt and pepper to taste and place, cut side down, along the outsides of a baking sheet.
- Bake in a preheated 450F/230C oven, on the lower shelf, for 10 minutes.
- Transfer to the top oven shelf and broil for 10 minutes.
- Meanwhile, mix the butter, garlic, parsley, and lemon zest.
- Flip the zucchini, spread the butter mixture on, sprinkle on the parmesan and enjoy!
Option: If you want to mellow the garlic a bit: Melt the butter in a small saucepan, add the garlic and cook until fragrant, about 30 seconds, before mixing in the parsley and lemon zest and spreading on the zucchini.
Option: Grill the zucchini!
